We grow "Candy" carrots, a variety of Chatenays that are short and wide. This makes them well-suited to Oklahoma's clay soils, and they are oh-so-sweet! Chunk them up for cooking, then glaze with a mix of butter, sugar, thyme, and ginger for a wonderful side dish. Be sure to save the tops to make carrot top pesto! ( See blog for recipe)
